We visited the Farm Yard last week...

...so decided to try some...

Tortoise Tarts

They were such fun to make...
... so easy and quick...
...my son did most of the work...
Tortoise Tarts

You need ...
200gr cake flour
100gr butter - softened
Water - 2 Tablespoons
A tin of apricot halves in syrup
apricot jam

Preheat the oven to 180 degrees
Rub the butter and flour together between your fingers to form breadcrumbs
Add a little water at a time to make a doughy lump (not too wet!)
(The recipe says set aside to stand for 20 minutes - we did not!)
Sprinkle some flour onto a work surface
Roll the dough out to about 3mm thick
Cut into rounds with a cookie cutter (about 8cm)
Place rounds into greased muffins pans
Put an apricot half onto each round
Bake for about 20 minutes - until the pastry looks golden around the edges
Warm some apricot jam in a pot until runny
Brush a nice amount onto each tart as they come out of the oven
Once cold they will be nice and sticky and sweet...
(Ours made about 16 tarts)
(Remember when you do not have enough mixture to fill all 12 muffin holes again,
pour a little water into the empty holes to prevent the tray from burning!)

More loving in our Home...

Coco Pop Crunchies
 These are so deliciously easy to make...

We call them...

 Dads Favourites

3 Table spoons Butter
60 Large Marshmallows (400gr bag)
9 cups of Coco Pops (1 box)

Melt the butter in a large pot
Once melted add the marshmallows and stir until melted
Add the Coco Pops and stir in well
Drop into a greased pan and flatten with a wet spoon or wet hands (easier!)
Allow to cool for a few minutes then cut into squares
We cut some into hearts with a cookie cutter
You can also roll them into balls...
or any shape you want!

Love is in the air...

Valentine biscuits

Valentine Biscuits
500ml Cake Flour
125ml Icing Sugar
5ml Cream of Tartar
2ml Bicarb of Soda
200g Butter

Preheat the oven to 180 degrees celcius
Sift together the dry ingredients
Rub the softened Butter into the dry ingredients
The dough should be well combined and easy to handle
Roll out on a lightly floured surface about 5mm thick, cut into shapes and place on a greased baking tray
Bake for approximatley 10 minutes until the biscuits are lightly straw coloured
Leave to cool
Enjoy plain or iced with a cup of tea....
Iced Valentine Biscuits

Icing
1egg white
Icing Sugar
few drops lemon juice
Food colouring if desired

Lightly beat the egg white
Gradually add the icing sugar
and a drop or two of lemon juice
until the mixture is of piping consistency
(or you can spread it on...)

Store in a pretty Bottle and Enjoy the week of...
