Chocolate Banana Muffins

The weather is really freezing at the moment, and today it has been rainy off and on...
So I decided to make some really yummy wintery type muffins...


You will need:
500ml Flour
7ml Baking Powder
2,5ml Bicarb of soda
2 ml salt
250ml Sugar
65ml Butter
125ml Chocolate bits
125ml chopped walnuts - optional
1 egg, beaten
50ml Milk
2,5ml Vanilla
250ml mashed ripe bananas (approx 2 -3 medium sized bananas)

Preheat the oven to 200 degrees Celsius - grease hollows of muffin tins.
Sift the flour, baking powder, bicarb and salt together.
Add the sugar and mix well.
Rub the butter into the dry ingredients until the mixture resembles bread crumbs.
Add the chocolate bits and nuts if using. - Mix well.
Beat the egg, milk and vanilla essence together.
Add to the flour mixture and mix lightly.
Add the mashed bananas and combine well.
Fill the hollows of the muffin tin and bake for approx 20 minutes  
(always keep a check as oven temps differ!)
Make about 12 large muffins.

Enjoy warm with some hot chocolate. Yum!

Cheese and Poppyseed Muffins

Oooh these are so delicious...warm with butter...warm with grated cheese...warm with a slice of tomato and sprinkle of salt...


You will need - 
500g Cake Flour
40ml Baking Powder
10ml Mustard Powder (If you have...I usually dont!)
5ml Salt
5ml Ground Black Pepper
65ml Blue Poppyseeds
3 cups Grated Cheese
(I used a mixture of white cheddar, yellow cheddar and mozzarella because thats what was in the fridge.)
30ml (2Tblsp) Butter
500ml Milk

Sift the flour, baking powder, salt, pepper and mustard powder together into a bowl. 
Add the poppyseeds, grated cheese and butter and rub together with fingers to mix nicely. Make sure the butter is rubbed in.
Add the milk to make a fairly slack/sticky dough.
Drop into greased muffins pans and Bake at 200 degrees celsius for 30 - 40 minutes.
(Remember - always keep an eye on them as oven temps vary!)

Healthy bran muffins

This recipe can be made and left in the fridge for up to one month and used as needed. 
It is a wonderfully easy, quick recipe to make, can be adapted easily...
and is always yummy...


You will need the following:

125ml (1/2 cup) sunflower oil
2 eggs
375ml (1 1/2 cups) brown sugar
500ml (2 cups) milk
250ml (1 cup) nutty wheat flour
375ml (1 1/2 cups) cake flour
500ml (2 cups) digestive bran
5ml (1 tsp) vanilla essence
5ml (1 tsp) salt
10ml (2 tsps) bicarb of soda
250ml (1 cup) raisins
250ml (1cup) freshly chopped apple

Beat  the oil, sugar and eggs together until well mixed. 
Then add all the other ingredients.
Combine well.
Bake in well greased muffin tins at 180 degrees Celcuis for 15 minutes.
(always remember to check as ovens differ!)
 Please remember if there is not enough mixture to fill all 12 muffins tin holes, just fill the empty ones with a little water to avoid them burning...
Serve with butter and jam or cheese or just as is...

Adaptions:
You can add various things to the basic mixture - apple and raisin are always a favourite but you can replace them with fruit cake mix, chopped dates, tinned apple, mashed bananas, nuts etc etc...

I have sprinkled a little raw oats and brown sugar on the top...

Instead of nuttty wheat flour you can add oats...

I often add extra bran to make them more brany...
