Sweet Potato Bread

 This is a lovely soft bread...give it a try...


You will need:
250gr cooked sweet potato (a nice sized raw potato)
750ml cake flour
1 tsp salt
10g instant yeast
400ml warm water

Cook the potatoes till soft - then puree.
Sift the flour into a large bowl, add the salt and yeast. Make a well in the center of the flour.
Combine the wam water and sweet potatoes, to make a smooth mixture.
Pour into the well in the flour and mix and knead - it will be a sticky mixture.
Return to bowl, cover with a cloth and place in a warm spot to rise. Allow to double in size.
Preheat the oven to 220 degrees celcius.
Sprinkle a little flour on a work surface and knead the dough, just a little - divide into 2 loaves.
Place in bread tins or shape the dough on a baking tray.
Allow to rise again.
Sprinkle the breads with a little flour and bake for approx 10 minutes, then turn the oven down to 180 degrees celcius and bake for approx 10 - 20 minutes. (oven temps differ!)
The bread is cooked when it makes a hollow sound when tapped.

It took long to find them cos you need a tag/label index in the side bar.......if you have one of those then if I'm looking for something I click on that and then it brings up everything you've made in that category.......just a thought (it would make my life easier when I come hunting ;-)
