Raw Fudge

 This was the first raw recipe I tried and we were hooked...it is healthy (amongst other benefits!) and a great treat for the children - who love it...It is rich, so one piece at a time is great...give it a try...I know you will love it!
It comes from this great book - take a look,  and at all the other great things they do...!!


 You will need
1 cup pitted dates
1/2 cup water
1 cup coconut oil
1/2 cup cacao powder
pinch salt
1 tsp vanilla powder

Soak the dates overnight.
Always remember to melt coconut oil first - never use as is in desserts. Place 1 cup coconut oil over a bain-marie (a small glass bowl in a big glass bowl!) and let it melt slowly...do not use boiling water, as you will lose the benefits of raw.
Once it is liquid place in a food processor with all the other ingredients and blend until smooth.
(It will be a  lovely thick chocolately mousse consistency!)
Pour into a shallow fridge dish and refrigerate...
Cut into square's and enjoy

  1. HI Shelley! I've been wanting to try these for a while and am in serious 'messing around in the kitchen' mode, so no time like the present. Just want to ask about vanilla powder...any ideas where to buy this? Supermarket? Or is it a health shop product? Not familiar with it. Xxx Grietjie

  2. Dear Joyful Grietjie, do try this, you wont be sorry ;-)...I have bought it from PnP, and I see Woolies have extended their baking range so you might even find it there. Of course you can buy a pod and then scrape the seeds out to be used. Otherwise yes a health shop...http://www.rawlicious.co.za/vanillapowder50g.html
