Grannies Crunchies

Its SPRING...yah!

These crucnchies remind me of holidays...when we were children my maternal granny would make sure we had a tin or two or three of these crunchies to take along on our familiy holidays...
So today, the weather is beautiful and the feel of summer and holiday is in the air...
so my knight and I made a batch...

You will need:-

1 cup sugar
1 cup cake flour
2 cups oats
1 cup coconut
225gr butter - melted
2 Tblsp syrup
1 tsp bicarb of soda

Preheat the oven to 150 degrees celcuius.
Melt the butter and add the syrup. Add the bicarb of soda and mix a little, it will froth a little.
Sift the flour, add the sugar, oats and coconut.
Add the butter mixture to the dry ingredients.
Mix till combined.
Grease an oven container (about 24 x 30cm), put mixture in and press down with your hands. Make sure the mixture is nicely compacted.
Bake for approx 20 - 30 minutes (keep an eye on it, as oven temps differ!)
It will be soft to the touch and golden brown when done.
Cut in squares while still hot and then allow to cool.

  1. Oooo those do look good! Drooling at the screen, guess I should have checked your site first before I switched off the oven after baking the muffins! Oh well, next time!
